oxidation

When wine comes into contact with too much oxygen, it oxidizes. This process happens automatically when you open a bottle. Using vacuum closure systems and storing the opened bottle in the refrigerator can slow but not stop the oxidation process. Even sealed wines that have been stored for too long will oxidize sooner or later.

Some wine bottles contain metal parts such as caps or caps. Excess moisture can corrode these metal parts, negatively affecting the wine and releasing potentially harmful substances.
