Eggs with wild garlic are both delicious and add color to spring breakfasts. So: grab the whisk and let’s go!

Wild garlic omelette
Ingredients for 4 people | |
1 bunch | wild garlic |
2 | steak tomato |
½ | courgette |
8. | Eggs |
3 bodies | Parsley |
butter | |
rapeseed oil | |
Salt and pepper, spices as desired |
preparation
- Wash and chop the wild garlic, tomatoes, zucchini and parsley.
- Heat the butter and rapeseed oil in a pan.
- Steam vegetables and wild garlic in a pan.
- Meanwhile, mix the eggs in a bowl with a whisk.
- Mix the mixture with parsley, salt and pepper.
- Fry the egg mixture in a pan with oil.
- Add steamed vegetables to the omelette and fry briefly.

Scrambled eggs with wild garlic
Ingredients for 4 people | |
1 bunch | wild garlic |
40g | bacon cubes |
8. | Eggs |
8 tablespoons | cream |
butter | |
Salt and pepper, spices as desired |
preparation
- Wash the wild garlic and chop finely.
- Heat the butter in a pan and fry the bacon in it.
- Beat the eggs with the cream, add salt and pepper.
- Add the egg mixture to the bacon, add the wild garlic and fry briefly.
- Press the mixture together with a spatula and divide until you have a golden-brown scrambled egg.

Stuffed eggs with wild garlic
Ingredients for 4 people | |
40g | wild garlic |
8. | Boiled egg |
1 teaspoon | Mustard |
1 jump | lemon juice |
2 tablespoons | olive oil |
80g | butter |
Salt and pepper, spices as desired |

preparation
- Peel the eggs, cut them in half and remove the yolks.
- Mix the heated butter with the mustard until fluffy.
- Add lemon juice, salt and pepper to the mustard mixture.
- Wash the wild garlic, chop finely and mix with olive oil and egg yolk.
- Mix the egg yolk mixture and mustard mixture in a bowl until creamy.
- Pour the cream into a piping bag and fill the egg halves with it.
