Smokey caprese sandwich

The Caprese (tomato and mozzarella) sandwich is a summer classic. But here we give it a smoky twist – thanks to smoked scamorza.

Vietnamese summer rolls

A classic from Vietnam. Unlike spring rolls, summer rolls are not fried, but wrapped in rice paper and eaten cold. A refreshing, healthy snack. And best of all: you can put them together individually and according to your taste.

Tip: If you want to cut back on the carbs, you can also omit the rice noodles and put more veggies in your sandwiches.

Empanada’s

The dumpling classic from Spain and Latin America. Empanadas can also be prepared in advance and eaten cold later.

Tip: If you don’t feel like making the dough yourself, you can also use ready-made, rolled out cake or pie dough. Our suggestion here is a Mexican empanada with meat. But there are also delicious vegetarian fillings (spinach feta, grilled vegetables with manchego, etc.).

The delicious summer recipes continue in this way, but first a short commercial break:

And now back to the recipes…

Chickpea Wraps

The wrap is an alternative to the classic sandwich – and this alternative is vegetarian and also has an oriental touch.

Gazpacho soup

Yes a soup! A cold soup. With a good Tupperware, transport to the swimming pool should not be a problem either.

Fennel Salad With Pesto

I feel that fennel is still a bit underrated in Switzerland. This recipe gives the classic summer vegetable an Italian twist.

Ratatouille Fregola Salad

Fregola is a type of pasta typical of Sardinia. The small balls of durum wheat semolina are ideal for salads.

Flammkuchen bags

A classic from Alsace, but then turn it into dumplings!

Nicoise salad

Another classic from French cuisine. For me, this Mediterranean salad is a highlight in the summer months.

Tip: In this recipe we do not use the lettuce, because it will quickly shrink in the sauce. If you want, you can also add 1-2 anchovy fillets to the sauce. Personally, I don’t cook the potatoes in the Niçoise. I cut them in half, marinate them with a little olive oil, salt and pepper and then bake them in the oven until crispy on the outside and soft on the inside. This gives the salad extra flavor.

Pie with fennel and ricotta

Shutterstock disappointed me with the selection of images. Something like that, only with fennel and ricotta.

Korean cucumber salad

A light yet spicy salad for warm summer evenings.

Strawberry Cream Cheese Pie

Something delicious in the pool is of course also allowed. And what could be better than strawberries in the summer?

apricot bags

The apricot is one of the Swiss summer fruits par excellence. Again, we combine them with puff pastry.
