Weeds aren’t just a garden foe: Scarlett Allensbach (35) explains the health benefits of weeds and how to use them in the kitchen.

Dandelion, nettle, and bird grass are unwanted weeds in the bed. What many people don’t know is that you can eat them immediately after tearing them. Because it tastes good and healthy. Blick horticultural expert Scarlet Allenspach (35) says: “My favorite edible weed is orache. It tastes like spinach, it just gets better and grows everywhere. So even if the world ends, you can survive with it.”

How incorporating weeds into our kitchen works: This rethinking started in the 1980s. The environmental movement recognized the value of these plants as an essential part of the ecosystem.

  • ground attendant (aka Gundelrebe): Can be used as a parsley-like spice.
  • cat eyes (also known as Germander Speedwell): Leaves, shoot tips and flowers are suitable for tea, salad, soup or herb paste.
  • Dandelion: The leaves can be used as a salad or vegetable, and the flowers as syrup or jam. Roots replace coffee.Crimson Deadnettle: It can be used in salads or as a spinach vegetable.
  • bird grass: It can be used in salads, spinach or curd making.
  • wild carrot: The leaves, flowers, roots and seeds can be used raw or cooked.

These weeds are only a small part of what grows in our gardens or balconies. But be careful: do not mix it with poisonous plants, especially hemlock or dog parsley! To precisely identify the edible parsnip, attention should be paid to the purple to black mini-flowers in the center of the umbrella. With this information we can reliably identify and distinguish weeds from other plants. Therefore, nothing can stand in the way of healthy and safe weed processing.
