The world-famous Copenhagen restaurant Noma will close its doors at the end of next year – to reinvent itself culinary. “In order to stay Noma, we have to change,” the restaurant said on the online service Instagram on Monday. “Winter 2024 will be the last season of noma as we know it,” it said.
Voted best restaurant in the world
The Noma has been voted the world’s best restaurant several times by the British magazine “Restaurant” and has been awarded three Michelin stars. «Noma» is the abbreviation of «Ny Nordiska Mad» (New Nordic Food). The eatery offers dishes from Scandinavian countries, such as Greenlandic musk oxen, and serves them with locally grown vegetables and grains.
The restaurant opened in 2003 in the center of Copenhagen. In 2016 it moved from there to a converted warehouse with a greenhouse on the roof near the municipality of Christiania.
A laboratory for the “development of new flavours”
In 2025, the restaurant will “turn into a giant laboratory,” the restaurant’s statement said. There should be a “test kitchen”, focused on food innovations and “development of new flavors”.
Although guests would still be served in the future, it was said about the project “Noma 3.0”, but “being a restaurant will no longer define us”.
