Sugar Feast is the biggest break of fasting after Ramadan and is the second most important holiday in Islam after Eid al-Adha. The festival ends the month of Ramadan. Fasting in the ninth month of the Hijri lunar year is one of the five pillars of Islam. What is baklava?
A sweet dessert popular in the Balkans and the Middle East, baklava is a pastry made from puff pastry with chopped walnuts, almonds or pistachios. Baklava is made from very thin layers of phyllo, so it’s not an easy task. The production of this refined dessert was therefore already a mark of skill in the past. Even the sultans tried to enchant and win over their queens with a homemade baklava. Here you will find simple variants with step-by-step instructions.

Thinly roll out the buttered puff pastry and cut into strips 5 cm wide and approximately 30 cm long. Brush with a little milk with a brush. The dough should only be slightly wet!

Add chopped pine nuts and – very little – chopped pistachios on top.

Roll it crosswise and cut into 4 cm pieces. Place them on a buttered baking sheet. Don’t sleep!

Place in the lower part of the oven preheated to 200 degrees and bake until slightly dry.

Brush with some sugar water. Put in the oven for another 5 minutes.

Milk foam is made as follows. Bring the milk to a boil and continue to scrape off the foam that has formed. It is poured into a plate and then used as directed.

Spread some milk foam on it, decorate with 1 pistachio and leave the baklava to cool.
Sanjura (rhombus)

Place a 30 cm long and 20 cm wide sheet of dough on a baking sheet and brush with some melted butter.

Repeat this process four more times with more phyllo and stack them on top of each other. Use some butter so that the pies don’t get oily!

Sprinkle chopped pistachios and some chopped walnuts on top.

Grease the five phyllo as before and put the stuffing on the first phyllo.

Cut into rhombuses with a sharp knife and bake in the oven at 200 degrees for 15 minutes.

Sugar syrup is made by boiling 5 dl of water and 1 kg of sugar together and left to cool.

Then brush it with some syrup and put it in the oven for another 5 minutes. Caution: Do not use too much syrup because the baklava should not float in the sugar.

Sprinkle chopped pistachios on top and serve.
Mad bi Tamer (date tart)

preparation
- Make a paste of 500 grams of ground millet with 250 to 300 grams of butter. Make the dough a little smoother with 1 or 2 tablespoons of water if needed.
- Puree pitted dates and mix them with 2 tablespoons of bitter orange blossom water (preferably from a Turkish deli like yufka!).
- Roll out the dough to a thickness of 2 to 3 mm. Put half of it on a baking sheet and spread with date sauce.
- Cover with the second half of the dough.
- Spread some butter and put everything in the middle of the oven preheated to 200 degrees.
- Bake for 20 minutes, then cut into squares and brush with a little sugar water on their surface. Hard.

Stack 5 sheets of dough on top of each other and roll out the stars with the mold. Brush these stars with some melted butter and stack them on top of each other.

Chop a juicy mixture of pine nuts, walnuts and dates or figs. Cover the star shapes with this and fold the star fingers.

Arrange on a greased tray.

Bake the stars in the lower half of the oven preheated to 200 degrees for about 20 minutes.
