As soon as the cork of a wine comes out, the clock starts ticking. Increased contact with air leads to so-called oxidation. With a little wine this could mean that after a few hours the taste is even better than when it was first opened. But after a few days at the latest, the wine smells like vinegar in the glass.
There are several ways to counter this problem. The most common way is to pump the air out of the bottle with a vacuum pump and then close the bottle with a plastic cap.
A bottle will keep for several days in the refrigerator. After a week at the latest, you can use the wine only for cooking.
Coravin system works with needle and gas
A new solution to the protection problem was found a few years ago with the Coravin system. In fact: A Coravin outshines all other products. The key is not to have to remove the cork from the bottle to get to the wine.
In the first step, a very fine needle gently pierces the cork until it comes into contact with the contents of the bottle. In the second step, a special, odorless gas is injected into the bottle, and the pressure of this gas causes the wine to flow out of the Coravin. The needle is then pulled out, whereupon the cork is completely closed again.
A bottle of Coravin can last for several years
Tests have shown that wines opened with Coravin can last for several years. But personally, I’ve found that after a year at the latest you start to notice the differences compared to freshly opened bottles.
A gas cartridge costs between 10 and 20 francs and is sufficient for about 15 glasses of wine (150ml). Coravin is sold in stores with prices starting from 200 francs.
Beware of the risk of injury: the very fine needle is razor sharp!
Coravin is not suitable for all wines
Because synthetic and plastic corks are not as flexible as natural corks, they do not become resealed after being accessed by a Coravin system.
This causes the wine to oxidize during storage. The Coravin system should therefore not be used with synthetic corks. Screw caps are also not suitable for this.
When is purchasing useful?
If you’re keen on having a glass or two of wine and the rest maybe a few weeks or months later, a Coravin is worth having. You can also use it to test whether a wine you have in the cellar is ready to drink or if it needs to be stored for a while.
If the wine bottle is always empty the same day or the next day at the latest, Coravin doesn’t make much sense. Coravin is an absolutely revolutionary invention.
