Albeli are dwarf whitefish found only in spring. The simplest «Albeli recipe» is really easy. For this you need crusty fillets of the freshest Albeli. They are placed on a bed of small chopped vegetables. Then sprinkle everything well with salt, acidify generously with white wine vinegar, and then cover with water. After 24 hours, the fillets can be used thoroughly drained. One onion for sour cream is cut into thin strips and briefly stewed in boiling water. Drained, quenched and drained, they come under just enough sour cream—with the smallest cubes of apples and cucumbers. Season well and pour over fish fillets. Serve with toasted, warm bread.
