February 7 is National Fettuccine Alfredo Day in the United States. But the food seems to be little known in Italy. In fact, this is actually a pasta dish that is popular even in the homeland and is known by its other name. Italians call the classic fettuccine al burro. The dish, now known as fettuccine alfredo, was invented by Alfredo di Lelio in Rome in 1908. While working in his mother’s restaurant, he cooked the fettuccine al triplo burro, which he called «fettuccine all’Alfredo». Later, he opened his own restaurant in Rome and his fettuccine soon gained national and international fame. In 1920, American movie stars Douglas Fairbanks and Mary Pickford discovered Di Lelio’s restaurant in Rome on their honeymoon. They were so enthusiastic about this pasta dish that they gave the chef the gold cutlery engraved “For Alfredo, the pasta king.” Since then, Hollywood stars have stopped by regularly. There are only three ingredients in the original recipe: fettuccine, Parmesan cheese, and butter. Today there are other varieties of fettuccine alfredo.
