Food trends 2023? Which one would you REALLY want?

Market analysts, trend researchers, press spokespersons for food multinationals and food bloggers of all kinds – they all make oracles, which trends will revolutionize our eating habits in the new year. This year? So, glocalization, for example, is a current buzzword – the harmonization of the relationship between globally imported and locally produced food. Or the veganization of traditional recipes should remain trendy thanks to the ever-increasing range of meat substitutes. So far, so clear.

And besides, there is also the food trends you would actually like. “Damn, a decent dim sum restis – that’s all!” Well, anyway: Some of my wish lists from the past few years can now be found (at least here in Zurich): There are more and more ramen bars, Vietnamese anyway and I know where to get Japanese street food and a decent masala dosa too.

Nevertheless, the following applies in Switzerland: There are hardly any food trends in this country. Instead, they are adopted from elsewhere, and the local clientele gratefully accepts. Supply is not determined by demand, but vice versa. But what if food trends stem from demand? Which food trends do we really want? I asked around the editorial office. Of course, there are now a few food trucks in this country that sell tacos. But there is still room for improvement – especially when it comes to late night availability. I’ve mentioned it here several times: Folks, nothing beats stumbling into a club somewhere in Southern California in the early morning hours and seeing the promising silhouette of a taco truck across the street.
