You’ve probably never had potato salad like this before: crunchy! A new food trend is currently taking over the social media world. More and more videos show people munching on the viral potato salad mixed with baked potatoes and yogurt dressing.
The new trend is a continuation of an old food trend: “potato mash”. For example, if you cooked leftover Gschwellti from raclette, place it on a baking tray and level it with the bottom of a glass or other flat object. The “mashed potatoes” are then marinated in oil and spices and baked until crispy.
Potato salad with crunchy effect
The new viral food trend “Crispy Potato Salad” is now made with just this type of baked and mashed potatoes. While the tubers are cooked in the oven until they thicken and become crispy, the sauce consisting of yoghurt, mayonnaise, mustard, vinegar, lemon juice, dill and chives is mixed. Of course there is salt and pepper.
The yoghurt sauce is then accompanied by chopped cucumber, fresh garlic and scallions or red onions. Finally, mashed and crispy baked potatoes are chopped into bite-sized pieces and mixed. The salad probably tastes best when it’s fresh: otherwise it may lack the crunchiness.
Basic recipe with a twist
There are now several variations on the viral salad trend: People are busy experimenting with radishes, peppers, avocados, vegan dressings, and high-protein produce. Some also add crispy fried bacon or, for example, tahini, a paste made from finely ground, roasted sesame seeds, usually from Arabic cuisine.
