Guanciale, egg, pepper and pecorino. These are the cornerstones of a good carbonara. At least that’s the case so far. Because Bolognese food historian Luca Cesari believes that the classic of Italian cuisine is not implemented correctly.
In the video uploaded to his Instagram channel, he presents the allegedly original version of carbonara. Accordingly, the sauce includes garlic, bacon, scrambled eggs, and Swiss cheese (i.e. Gruyère).
“It is not my fault”
Cesari said he came across the original recipe published in an Italian cooking magazine nearly 70 years ago and wanted to show how the recipe has evolved over the years.
«I recreated the first carbonara published in Cucina Italiana magazine in 1954. It’s not my fault that this is a carbonara recipe,” the Italian told Reuters.
The original pizza with mussels?
Over the years the recipe has been changed again and again. In the USA, we now have carbonara cooked with mushrooms and oysters.
Cesari is causing a stir with his allegedly original recipe. There are many shocking comments under the video. But the Italian was not deterred.
And he has already announced the next video. But this time it’s not about pasta. “This was just the first video. I’m currently making a new video about traditional 1800 Neapolitan pizza.” (ymh)
