Eggs act as a binder and hold the dough together. On the other hand, they provide moisture by loosening the dough. However, many other products can also do the job. Special egg alternatives work well to replace a few eggs.
1. Applesauce
Applesauce is a good solution for baked goods that need some moisture. It takes about three tablespoons to replace one egg. The apple flavor is hardly noticeable after cooking. Also, the moisture in the applesauce makes the pastry nice and juicy. Therefore, no additional liquid is usually needed to thin the dough.
2. Banana
Bananas are particularly suitable as binders. A whole banana is equivalent to about two eggs. Mash the fruit with a fork and grind the pulp into pulp.

5. Vinegar and Baking Soda
Instead of an egg, mix 1 tablespoon of vinegar and 1 teaspoon of baking soda. Small air bubbles form when the two components come into contact. These make the dough fluffy. By the way, after cooking, there is no trace of sour vinegar taste.
6. Avocado
In fact, you can replace the eggs with avocados while cooking. Due to its neutral taste, the fruit is also suitable for sweet pastries. Half an avocado can be used instead of an egg. The process is exactly the same as for a banana. The fruit can even be used as an oil alternative due to its high fat content. In addition, it may be a little overripe. This makes crushing easier.
7. Oatmeal
Oatmeal can also be used as a binder. As a rule, three to four tablespoons correspond to one egg. If you are using oatmeal instead of eggs, you have to be patient. Let the dough rest for about 20 minutes before placing it in the oven. Oatmeal needs time to develop its glue.
