Because summer is finally here: (pepperoni) sorbet in the vegetable roulette

We spun, the wheel decided: Today we have pepperoni 🫑🌶️. As summer finally seems to have arrived, top chef Noah Bachofen has come up with something fitting – he wants to conjure up a refreshing sorbet. Yes, you read that right: a pepperoni ice cream!

That’s not easy. But Nico is slowly getting to a level where you can also do something more demanding, says Noah. But he could be very wrong about that…

200 g pepperoni juice
50g sugar
30g glucose
30g lemon juice and lime juice
50 grams of champagne
apples
soy sauce

pepperoni salad
½ hot pepper
½ onion
½ clove of garlic
burrata
bitter salads
lemon juice
olive oil

Juice the peppers and mix with the other ingredients. Put the sorbet mixture in the ice cream maker and let it freeze slowly.

Marinate the salad and serve with the burrata. Remove a gnocchi from the sorbet just before serving.
