While some differences may reflect international food trends or proximity to neighboring countries, some habits remain constant. Claudio Schmitz also realizes this. He is the culinary director of the SV Group, which supplies many canteens throughout Switzerland. “The most popular in our cafeterias are spaghetti Bolognese and chips or breaded schnitzel with peas.” But Schmitz also clearly sees differences between regions in Switzerland.
