Ancient Romans were already adding spices to their wine, and in the Middle Ages, mulled wine was even considered medicine. “conditum paradoxum” (Latin for mulled wine) can be found in the two-thousand-year-old recipe book of ancient gourmet Marcus Gavius ​​Apicius: For every five liters of wine, there is one liter of honey. plus 30 star anise, three cinnamon sticks, laurel and cloves, coriander and thyme. The Romans “refined” their wine (which was often very sour at that time) with spices, and not just for the sake of taste. Only since the 1500s has sulfur been added to wine to make it last longer. Before that, this was the job of honey and sugar. Here’s a basic recipe that I can improve with other spices.
