Spanish cava sparkling wines are experiencing a wave of success. A total of 249 million bottles were sold and exported all over the world in 2022. In Switzerland alone, cava sales increased by more than 50 percent last year compared to the previous year. Although rosé cava, called rosado in Spain, accounts for only a small fraction of total cava production, these wines are also becoming increasingly popular.

Unlike Prosecco, Cava is made in the same way as Champagne, that is, using the traditional method. Cava Rosado de Guarda must mature on fine yeast in the bottle for at least nine months before it can be sold. These minimum storage times are even longer for Cava Reserva and Cava Gran Reserva. About 95 percent of all cava comes from the Penedès region near Barcelona.

Unlike other sparkling wines, Cava Rosado can only be produced in direct contact with the grape skins. For this reason, winemakers are not allowed to change the white color of the base wine to rosé with a shot of red wine. Additionally, at least a quarter of the grapes used for Cava Rosado must come from dark grape varieties.

Garnacha Tinta (Grenache noir), Monastrell (Mourvèdre), Trepat and Pinot noir are used. However, the dark-coloured Spanish flagship variety, Tempranillo, is not approved for cava production. The main components of Cava Rosado are still the white grape varieties Macabeo, Xarel-lo, Parellada and Chardonnay. If the cava is still sweet, some Malvasía is usually added.

You can find fresh, fruity and rich Cava Rosados ​​at specialist retailers in Switzerland for just 15 francs per 0.75 liter bottle. Elegant foamers are ideal for appetizers, sushi or Mediterranean cuisine and are likely to continue to gain popularity in the coming years.
