Once the summer weather calms down and it becomes cool and humid outside again, porcini mushroom season begins. With their spicy, nutty and slightly sweet notes, these little natural gifts turn the simplest pasta or rice dishes into a real culinary pleasure. Porcini mushrooms are known for their intense flavor that adds delicious depth to many culinary dishes.

In addition to red wines, some white wines are also suitable for combination with porcini mushroom risotto. They are often a better choice, especially at lunch. Dry, full-bodied white wines are needed to best complement the strong risotto, but they will not mask the delicate flavor of the porcini mushrooms. Chardonnay

Chardonnay, matured in oak barrels, pairs perfectly with aromatic porcini mushroom risotto. You can find the most exciting Swiss examples in Bündner Machtum, but there are now some extremely interesting alternatives in Western Switzerland as well. When it comes to white Burgundy wines or American pearls from Sonoma or Napa, for example, it is worth looking beyond the borders of the country.

A white grape variety

Strong, dry Rieslings from the German Rheingau region are the crowning glory of any porcini mushroom risotto. Bottles labeled “Gross Gewächs” (GG) are invariably dry and come from the best places. You’ll hit the nail on the head with wines that have been bottled for several years.

Pinot Blanc

This relatively rare grape variety is called Pinot blanc in France and impresses with its noble restraint. You can find exciting examples from the Alsace or South Tyrol regions. The wines are slightly less powerful than Rheingau Riesling but no less exciting.

Green Valtellina

This versatile Austrian product with its peppery note also creates a beautiful figure with porcini mushroom risotto. Watch out for wines labeled “Federspiel” and “Smaragd”, which are among the richest and most powerful examples. These wines also pair even better with porcini mushroom risotto when aged.
