The “best army in the world” cannot be beaten in the kitchen either. The Swiss Armed Forces Culinary Team (SACT) took first place this week in the ‘Community Catering’ category at the Culinary Olympic Games in Stuttgart (D), as the Ministry of Defense (VBS) announced on Thursday.

The team, consisting of six military chiefs, prevailed against twenty other teams and was named the best military team of all participating countries. The international jury awarded the Swiss Army’s national cooking team a score of more than 90 points. That is equivalent to the gold medal.

Menu cooked for 120 people

The team cooked a menu for 120 people. According to VBS, it consisted of three appetizer dishes, a starter, two different main courses with an emphasis on vegetables and a mini dessert. The photos of the dishes that SACT posted on Instagram make your mouth water.

As an aperitif, chicken balls with fondue core, stuffed kohlrabi rolls and nut bars with cassis and apple were served.

The starter consisted of couscous salad with pears, broccoli salad and parsnip cream, lentil and bean salad, herb dressing and nut crunch with crispbread.

The main course consisted of celeriac vegetables with carrot puree and two types of kale. This was served with: either mashed potatoes with fried onions and a “beef duo” with a port wine gravy – or the vegetarian version, a Bramata polenta with crispy corn and a “mushroom-cauliflower-egg variation” with a vegetable gravy.

For dessert there was a sour cream mousse with apple-dill-sea buckthorn seed and almond cake. Army chiefs refined the Olympic menu during five test runs.

The team must convey a modern image of troop catering

The Culinary Olympics in Stuttgart are the largest culinary art exhibition in the world. It is carried out every four years.

The Swiss team consists of selected military chiefs and trained military chiefs. The aim is to convey the diversity of the Swiss Army and a modern image of catering for troops on different occasions.
