Nico didn’t know that potatoes aren’t vegetables – that’s why we’re having fries today

Potatoes are Nico’s favorite vegetable. So he was delighted when the pointer landed on them in this week’s vegetable roulette.

The catch: Potatoes aren’t actually a vegetable (that’s probably why Nico likes them so much 😜). Apparently Nico didn’t know that when he made the bike. Or he just deliberately ignored it – cleverly designed. In any case, we did not want to deny him the pleasure of his potatoes. After all, we were curious ourselves what Chef Noah would conjure up.

Okay, okay, we’ll tell you: homemade fries with truffle mayonnaise. 🤤 (!!!)

5 floury potatoes
Salt pepper
Parmesan cheese

For the mayonnaise
1 piece of egg yolk
2 pieces of egg white
60g Aceto, light
20g lemon juice
10g salt
350g rapeseed oil
10g truffle oil

Wash the potatoes and cut them into chips. Soak the sliced ​​potatoes in water overnight.

The next day, fry the fries for 8 minutes at 140 degrees Celsius. Then let it cool down and bake for another 3 minutes at 180 degrees Celsius. Season the fries with salt and pepper. For the mayonnaise, place all the ingredients except the oils in a blender and mix together. Then mix in the rapeseed oil in a thin stream. Finally, season with the truffle oil. Grate Parmesan à la minute over the fries.
