These white wines are a dream with asparagus

As asparagus has a very delicate aroma, dry white wines with pronounced fruit notes, medium body and slight acidity are suitable to complement the various aromas of the popular vegetable. All of these characteristics apply almost exactly to Switzerland’s flagship variety Chasselas, which accounts for almost two-thirds of all white grape varieties planted in this country. You will find excellent Chasselas wines, for example, from the cantons of Vaud and Geneva, and the sunny Valais, where delicious white wines are called Fendant, not Chasselas.

Rarely found in Switzerland, the official name of the grape variety is Pinot Blanc and is known for its timid style. You can find them in Alsace and Burgundy, where the best vineyards are devoted to other grape varieties. This is not the case in Germany, where Pinot Blanc can have a rich stone or even tropical fruit fragrance, and sometimes even come from the best places where the grapes are selectively picked by hand.

Also known as Riesling-Silvaner, this grape variety is the second most planted variety in Switzerland and incidentally also in Germany. Müller-Thurgau has even lower acidity than, for example, Pinot Blanc and produces uncomplicated wines with a restrained character. But here, too, some wineries print high-quality specimens with attractive floral and fruity notes. Müller-Thurgau is ideal not only to accompany asparagus, but also as an aperitif.
