In addition to the dark Grenache noir variety, there are also white shoots, such as Grenache blanc, which are often used in white Châteauneuf-du-Pape wines.
Syrah wines are darker than Grenache and exhibit notes of plum, blackberry, herbs, and a distinctive peppery note, especially in colder places. In the red Châteauneuf-du-Pape wine, Syrah contributes to a denser texture, deeper color and a wider range of flavors.
This dark grape variety likes high temperatures, provides a deeper color in a red Châteauneuf-du-Pape like Syrah, and gives wines additional aromas of predominantly dark fruits such as blackberries and blueberries, sometimes with floral notes.
With its pale color, red fruit flavors and low tannins, Cinsault is a preferred grape variety in Châteauneuf-du-Pape wine. About 500 years ago, the black grape variety Vaccarèse was first mentioned in Saint-Saturnin-lès-Avignon in the southeast Vaucluse region. It produces fruity red wines with a pale color and moderate alcohol content.

Single varietal wines of this dark grape variety are light colored. The relatively high acidity and subtle floral notes make muskard a useful ingredient in the full-bodied wines of Châteauneuf-du-Pape.
The Picpoul blanc grape produces an invigorating floral wine with citric aromas, a sharp acidity, and is considered better quality than its red sibling, Picpoul rouge.
The white grape variety Picardan, officially known as Araignan, produces very light wines with a neutral flavor. Araignan is rarely planted outside of Châteauneuf-du-Pape.
Wines made from this grape variety tend to have a moderate alcohol content and a refreshing acidity that can stand up well to the temperate climate of Southern France.
