Preparation:
- Dough: In a bowl, mix the butter until peaks form. Add the powdered sugar, salt, vanilla sugar and water and mix everything together. Sift the flour in batches and knead.
- Wrap the dough in cling film and rest in the refrigerator for at least 30 minutes. Preheat the oven to 200 degrees.
- Roll out the dough to a thickness of 2 mm and cut the cookies the way you want. Use a small cutter to cut through the middle of the halves for later caps.
- Arrange the phyllo at regular intervals on a baking tray lined with greaseproof paper. Bake on the middle rack of the oven for about 5-10 minutes. Remove the cookies and let them cool for at least 15 minutes.
- Heat the jelly or jam in a small pan and mix until smooth. Spread the jam on the bases of the Spitzbuben.
- Sprinkle them with powdered sugar and place them on the bases and press down lightly.
Anise Chrabeli
You either love these cookies or you hate them. Not everyone likes the taste of anise.

Preparation:
- Mix the eggs, powdered sugar and salt in a bowl until the mixture is light and fluffy.
Add the anise and mix. Sift the flour in batches and mix everything together to form a dough. - Roll the dough into finger thickness. Cut pieces 4-5 cm long, cut them twice and twist them into a crab shape. Anishrabeli traditionally look like three small-footed crescents.
- Lay it on a baking paper-lined tray and let it dry at room temperature for about 24 hours (covering it with a cloth).
- Preheat the oven to 150 degrees. Bake the Krabeli in the lower half of the oven, with the oven door slightly open, for about 15-25 minutes.
- Krabeli should get a “feet” while cooking, with the bottom light brown and the top white. Remove the finished Chräbeli from the oven and let it cool.
- Tip: Packed airtight and dry, Anischräbeli can easily be stored for up to four weeks.¨

Cinnamon stars are only for Christmas. Biscuits with white glaze also look very good.

Preparation:
- Beat egg whites with salt until stiff.
- Add the powdered sugar and mix briefly.
- Reserve a glass of water from the mixture for the pudding. Mix almonds, cinnamon and cherries.
- Add the remaining powdered sugar to the dough and knead everything into a dough.
- Roll out the dough on the sugar to a thickness of about 1 cm and cut out the stars with molds.
- Dip the molds in sugar between cutting. Place the cut dough on a baking tray lined with parchment paper.
- Using a spoon, carefully pour the cream over each cinnamon star and pull towards the star tips.
- Allow to rest at room temperature for at least 6 hours (preferably overnight).
- Preheat the oven to 250 degrees. Bake the cinnamon stars in the middle of the oven for 4-5 minutes.
- Make sure the glaze is not too brown. Remove the finished cinnamon stars from the oven and let them cool.
Brunsian
Another classic among Christmas cookies. Too much chocolate and too many flavors in a Brunsli.

The dough needs to rest for about 12 hours.
Preparation:
- Melt the couverture in a bowl over steam.
- Mix all ingredients together. Mix with liquid couverture last.
- Form the dough into a ball.
- Refrigerate the dough overnight.
- Roll out the dough to a thickness of 14 mm on a sugar (2) sprinkled surface. Sprinkle some sugar on the dough before rolling it out.
- Preheat the oven to 200 degrees.
- Cut out the Brunsli. Put it on the baking tray.
- Bake the Brunsli in the middle of the oven for 4 minutes. Immediately remove it from the tray and set it on the table.
- When cool, sprinkle powder snow on top and put in tin cans.
vanilla crescent moon
