Christmas jam from your own kitchen

Quince jam
3kg Quinces, cleaned

1 kg fresh figs
100 grams Candy
1 day Apple juice

500g Orange, very thinly sliced

150g apple pectin
150g fructose
1.5kg granulated sugar
1 day lemon juice, fresh
A little cinnamon, ground
Few cloves, ground
some cardamom, ground

  1. preparation
    Wash, dry and prepare glasses.
  2. Quince jam
    Prepare the quinces and cook them with water in a ratio of 1:1 on low heat until soft. Then pass it through a passevit and let it cool a bit.
  3. FIG jam
    Wash fresh figs and boil them with 100g of sugar and 1dl of apple juice.
  4. orange mousse
    Wash the oranges in hot water and cut them into very thin slices (seedless if possible). Boil the orange slices with 5 dl of water and 500 g of sugar until they turn transparent. Preheat the oven to 180 degrees.
  5. jam
    Put all three fruit purees in a large saucepan and bring to a boil, stirring constantly, along with the spices and lemon juice. Then add the apple pectin and cook vigorously for 4 minutes over high heat. Continuous mixing prevents burning. Add sugar and boil again. do the gel test. The 5th drop from the trowel should stick. If the jam is still too runny, continue cooking until it reaches the desired consistency.

Pour the jam into jars while still hot and seal them. Heat in the preheated oven for about 6 minutes. Take it out and place it on the lid for 30 minutes. Allow to cool and write on and decorate for personal use or to give as a gift.
