Much less wine is drunk in Swiss restaurants than 20 years ago. The reasons for this are the stricter alcohol limit for driving, as well as social changes. There are now many companies that prohibit their employees from consuming any alcohol during the workday. So no bottle of Chianti for an Italian business lunch.

Otherwise, people in this country are drinking less and less alcohol. In this context, wine by the glass offers the ideal opportunity to treat yourself to a glass or two without having to order the whole bottle at a restaurant. However, many restaurant customers ask themselves whether the quality of wines by the glass can keep up with wines by the bottle and how high their quality actually is.

Wines by the glass require proper handling

Experience has shown that clear wine quality in Swiss restaurants spans the entire spectrum. Sometimes sensationally good, sometimes embarrassingly bad. The problem is often not the wine itself, but how it is processed. The most common cause of poor wine quality is the time since the bottle was opened. The longer a clear wine is in contact with oxygen, the faster it oxidizes and deteriorates.

Of course, it is admirable that the hosts fight against food waste or wine waste and serve the wines by the glass until the quality loss becomes visible. A spilled wine always means lost sales. However, some restaurateurs value this more than their guests’ taste experience, so often flawless clear wines often end up in guests’ glasses.

Another problem is the service temperature. Opened wines are temporarily stored in refrigerators so that they spoil less quickly. If these wines are then served too cold, the fruitiness of the whites is suppressed, while the reds often have a metallic flavor. Either way, it helps to leave the wines served in the glass for a while to warm up and become more accessible.

Exam is better than study

To avoid the danger of open wine disappointment right from the start, feel free to ask the service staff if you will be given a special wine to try and show you the bottle. If it tastes good, it can be poured before your eyes. If not, you may be shown an alternative wine.
