Some red wines taste better chilled at room temperature. This makes them ideal for a mild summer night or to accompany a barbecue.
But you’ve probably wondered how cool “cool” is. If the wine is drunk at very low temperatures, its acidity, fruit flavors and sweetness will not occur by itself. So the rule of thumb is this: it’s usually served warmer than white wine and colder than red wine. Specifically: preferably between about 12 and 14 degrees. It is recommended to take the bottle out of the refrigerator about an hour before consuming it. Since the wine heats up in the glass, a lower pouring temperature is best, it will warm on its own.

Garnacha is a grape variety with relatively low tannin and acidity, but produces wines with a high alcohol content, especially in the warm climate of Spain, where it is common. If Garnacha wines are consumed at a temperature of 15 degrees Celsius or lower, this has the positive side-effect of less noticeable burning sensation of alcohol on the palate. The typical, food-friendly flavor of white peppers, plums and blackberries still holds its own. Another plus: There are many organic Garnachas on the market for small bags as well.
Valais comes up with the uncomplicated but elegant Dôle. Since 2021, this evergreen may contain 51 percent Pinot noir and Gamay, among other grape varieties grown in the canton. That’s why a classically designed Dôle with a dominant ratio of Pinot noir and Gamay of 85 percent or more is a good choice for the warm season, as it is guaranteed to be fruity. Red berries and floral notes create a sophisticated dream team with a piece of cheese or a quiche.
